Domaine Vayssette is a family business where two generations combine their knowledge to give the best of themselves in the production of Gaillac wines.
The vineyard consists of 26 hectares of vines whose production is regulated by the chart of the Independent Winegrowers.
The grape varieties are divided into 60% white and 40% red. Six grape varieties are used for red wine and as many for white wine. the proportion is gradually tending to give priority to local grape varieties, such as braucol and duras for the red Gaillac wines, or mauzac and loin de l'oeil for the white Gaillac wines. An average of 35 to 45% of the volume of Gaillac wines produced on the domain (very variable depending on the vintage) is bottled and marketed at the domain.
A third of the production is sold on the domain, in bulk. The rest is sold to merchants.
