A garnet-red colour with violet reflections, an intense and complex nose marked by fruity notes, more particularly morello cherry. A bold opening with powerful and silky tannins. A beautiful complexity, we find the aromas of morello cherry and a vanilla note in the mouth. Good length.

Keeping period of 7 to 10 years.

Serve at 16-18°c with meat such as beef, lamb and duck as well as game in sauce and cheese. Try with chocolate.

Terroir
Vines planted on clay-limestone slopes exposed on a south-western slope allowing a longer maturation. The estate has been awarded the High Environmental Value label and the vines are cultivated using sustainable agriculture. The vineyard management: short pruning, disbudding, leaf removal, green harvesting and above all manual harvesting allow us to control the yields and to pick the grapes at optimum maturity. Our aim is to produce wines with a minimum of inputs: no chaptalisation, no deacidification, no addition of artificial tannins, very little yeast or even none at all for certain wines and a minimum of sulphur.
Vinification
The cuvée is made from a manual harvest, crushed and destemmed. The grapes are vinified in 400 litre barrels for 20 to 30 days. Aged in 400 litre barrels for 18 months. (100% new barrels).

Tasting

A purple red colour with purple tints, a deep colour. Very intense and complex nose marked by fruity and vanilla notes. A bold opening with very powerful but elegant tannins. A beautiful complexity and richness in the mouth. A powerful, well-structured and complex wine. For lovers of strong sensations. Best decanted.
Can be kept for 10 to 15 years
Serve at 16-18°C with meat such as beef, lamb and duck as well as game in sauce and cheese. And chocolate dessert.
