A garnet-red colour with violet reflections, an intense and complex nose marked by fruity notes, more particularly morello cherry. A frank attack with powerful and silky tannins. A beautiful complexity, we find the aromas of morello cherry and a vanilla side in mouth. Good length.

Keeping potential of 7 to 10 years.

Serve at 16-18°c with meat such as beef, lamb and duck as well as game in sauce and cheese. Try with chocolate.

Harvesting
The harvest begins in the spring with manual thinning (an operation consisting of thinning out the vegetation and regulating the number of bunches per vine).
This is followed by manual leaf removal and manual harvesting

Vinification
The grapes are destemmed and crushed. The temperature is controlled during fermentation. After 3 weeks of vatting and traditional vinification, the wine is bottled the following spring.

Tasting

Visual
Deep garnet red colour with purple hues.
Olfactory
Complex nose, pleasant and a little closed on the youth. Notes of roasted hazelnuts, wood and a little vanilla are found on the first nose. The red fruits express themselves after aeration, especially the blackcurrant.
Taste
a frank opening. Lots of tannins in the mouth, very powerful but with great finesse.
A rich, very complex, thick wine for thrill seekers.
Ageing
To age for 2 to 3 years or to keep for a good ten years. If you drink it young, do not hesitate to decant it and open it at least 6 hours before.
Food and wine pairing
This Gaillac wine goes very well with red meat, meat in sauce, game, strong cheeses such as Livarot, Munster...
Try it with chocolate!
