Harvesting
The harvest begins in the spring with manual thinning (an operation which consists of thinning out the vegetation and regulating the number of grapes per vine).
Vinification
The harvest is destemmed and crushed. The temperature is controlled during fermentation. After 3 weeks of vatting and traditional vinification, the wine is bottled the following spring.

Tasting

Visual
Deep garnet red colour with purple hues.
Olfactory
Very intense and complex nose. Very aromatic, especially marked by red fruits and more particularly blackcurrant. Spicy and cocoa bean notes are also present.
Palate
Bold and round opening. Lots of body and power in the mouth. Very silky and persistent tannins. Blackcurrant aromas dominate in the mouth.
Ageing
A wine that can be drunk now, but that can also be left to age for a few years, around 6 to 8 years.
Food and wine pairing
This Gaillac wine goes very well with red meats, local specialities such as cassoulet, confit and also cheeses.
