A straw yellow colour, limpid and brilliant. An intense and very fruity nose with aromas of apple, pear, quince paste characteristic of Mauzac and slightly muscaté notes. A round and fruity attack, a nice freshness in the mouth gives a light finish. A fruity and tasty wine.

Keeps for 10 years or more.

Serve at 9-10°C with foie gras, desserts, especially fruit tarts, blue-veined cheeses, goat's cheeses, munster or simply as an aperitif.

20 to 25hl per hectare
Harvesting
Only manual harvesting allows us to get the best out of these old vines. The harvest is carried out in successive sortings (up to 4 passages in the same vineyard) and ends late (mid-November). The grapes are then in maximum concentration, thanks to the noble rot.
Vinification
This product is neither chaptalised nor yeasted (fermentation triggered by the grapes' natural yeasts). These grapes undergo a slow whole-berry pressing. Fermentation is carried out at low temperature.

Tasting

Visual
Straw yellow colour. Clear, bright with beautiful tears that suggest a wine with a lot of smoothness.
Olfactory
Complex and pleasant nose. Very fruity with notes of fresh fruits such as apple, pear with some notes of quince paste.
Taste
Clear and very pleasant opening. Lots of roundness in the mouth. A sweet wine but with a freshness in the mouth that does not spoil the palate. The aromas of apples and quince paste dominate in the mouth. A very pleasant wine with a long finish.
Ageing
This wine has an ageing potential of 10 years and more. Time gives the wine an old gold colour, more smoothness and fatness, while keeping a certain freshness.
Food and wine pairing
This wine is great with foie gras, but also as an aperitif, with melon or fruit pies. Try it also with blue-veined cheeses such as Roquefort.
